We’re on the lookout for a Sushi Chef who brings precision, innovation, and artistry to our kitchen!

Job Responsibilities

  • Prepare a variety of sushi items including sashimi, nigiri, maki, and specialty rolls, ensuring exceptional quality and freshness.
  • Monitor proper storage, preparation, and presentation of all sushi ingredients, especially raw fish.
  • Maintain compliance with hygiene, safety, and HACCP standards across all sushi production.
  • Ensure consistent portioning, plating, and visual presentation for all sushi dishes.
  • Assist in developing new sushi creations, seasonal menus, and signature offerings.
  • Ensure all food is prepared in sufficient quantities and on time for service.
  • Lead and support sushi station operations and guide junior staff when necessary.
  • Maintain inventory of sushi ingredients and coordinate with suppliers to ensure top-quality produce.
  • Collaborate with the wider kitchen team to ensure smooth and efficient service flow.
  • Report any equipment issues or hazards promptly to the Sous Chef or Head Chef.
  • Support broader kitchen operations and attend pre‑service briefings and tastings.
  • Maintain daily production, wastage records, and food safety documentation.
  • Follow and contribute to AYA Resort SOPs and maintain high service standards.

Requirements

  • Minimum 3 years’ experience as a Sushi Chef in a professional kitchen, ideally within a 4‑ or 5‑star hotel or resort.
  • High school diploma required; Culinary Diploma is an advantage.
  • Strong knife skills and deep knowledge of both traditional and modern sushi preparation techniques.
  • Excellent understanding of food safety and hygiene, including HACCP.
  • Ability to perform under pressure in a fast‑paced kitchen environment.
  • Excellent communication and teamwork abilities.
  • Flexibility to work evenings, weekends, and holidays as required.
  • Applicants must hold EU nationality without the need for visa sponsorship.
