Job Responsibilities
- Assist in the planning, preparation, and execution of all food items in accordance with the menu and quality standards.
- Ensure consistency in taste, portioning, and presentation of all dishes.
- Maintain cleanliness and organization of the kitchen and food preparation areas in compliance with hygiene and safety standards.
- Supervise and coordinate activities of kitchen staff to ensure smooth operation and timely service.
- Lead by example, offering guidance, training, and support to junior chefs and kitchen assistants.
- Collaborate with kitchen staff to ensure smooth operations during service hours.
- Assist the Head Chef in the creation and testing of new recipes and menu planning.
- Train across all kitchen sections and be prepared to cover staff absences or days off as needed, ensuring continuity and consistency in food preparation and service.
- Oversee that all food items are properly handled, labelled, and stored to prevent spoilage and contamination, in full compliance with hygiene and safety regulations.
- Assist in managing recipe costing, food budgets, and inventory in coordination with the Head Chef, F&B Management and procurement team.
- Follow health and safety regulations, including HACCP guidelines and internal protocols.
- Oversee kitchen operations during service and manage the team during busy periods.
- Take responsibility for the kitchen in the absence of the Head Chef.
- Communicate clearly with staff and management.
Requirements
- Minimum 3 years of experience as Sous Chef, or in a similar senior role within a 4-star or 5-star hotel or resort setting.
- Excellent communication in English is essential. Fluency in Greek is a strong advantage.
- Experienced in supervising, training, and motivating kitchen staff.
- Strong command of diverse cooking techniques and professional kitchen equipment.
- Good knowledge of food cost control, budgeting, and kitchen financials.
- Proven ability to perform under pressure in a fast-paced kitchen environment.
- Comfortable working collaboratively in a high-energy, team-focused environment.
- Flexibility to work evenings, weekends, and holidays as required.
- Excellent understanding of food safety and hygiene standards, including HACCP.
- Applicants must hold EU nationality without the need for a visa sponsor.
