About the Role We are seeking a passionate and skilled Demi Chef de Partie to join the culinary brigade at Manko, One&Only Aesthesis.
You will support the Chef de Partie and Sous Chef in the preparation, execution, and presentation of world-class dishes, ensuring quality, creativity, and consistency at every service.
This is a dynamic and hands-on role ideal for a driven culinary professional with a refined palate, a strong foundation in kitchen operations, and a flair for excellence in a fast-paced, luxury dining environment.
Key Responsibilities Assist in the preparation and production of high-quality dishes within your designated section, ensuring alignment with Manko’s creative vision and One&Only standards.
Execute recipes and techniques as directed by the Chef de Partie, contributing to the flavor, texture, and visual presentation of each plate.
Maintain cleanliness, organization, and compliance with hygiene standards (HACCP) throughout food handling and preparation processes.
Ensure stock levels are maintained and ingredients are stored properly, monitoring freshness and preventing waste.
Participate in daily mise-en-place, service, and post-service procedures with efficiency and attention to detail.
Collaborate closely with the broader culinary and service team to ensure seamless communication and guest satisfaction.
Uphold safety, grooming, and personal hygiene protocols in accordance with company policy and local health regulations.
Be proactive in learning, development, and mentorship opportunities under the guidance of senior chefs.
Skills, Experience & Educational Requirements Diploma or certification in Culinary Arts or Commercial Cookery from an internationally recognized institution.
Minimum 1–2 years of experience in a high-end restaurant or luxury hotel kitchen; experience with Peruvian, Nikkei, or contemporary Mediterranean cuisine is a strong asset.
Solid understanding of kitchen operations, cooking techniques, and plating standards.
Committed to delivering excellence under pressure and in a team-oriented environment.
Strong work ethic, flexibility, and passion for culinary innovation.
Basic proficiency in English; additional languages are advantageous.
Willingness to work in a seasonal, high-demand environment with rotating shifts, weekends, and holidays.
