Thanos Hotels & Resorts is seeking to recruit a Cheese Cook for the Anassa Hotel.

Job Role

  • To ensure that the production of local Cypriot cheeses and other dairy products meet the highest culinary standards as determined by the Executive Chef.
  • To carry out daily tasks required by the operation and meet the guidelines set by Thanos Hotels

Duties & Responsibilities

  • Ensure the hotel maintains an outstanding reputation for its artisanal cheese products.
  • Follow traditional and modern recipes for cheese-making and maintain proper documentation for consistency, safety and quality.
  • Oversee the preparation, fermentation, and aging processes to produce high-quality cheeses.
  • Monitor the quality of raw ingredients, ensuring freshness and adherence to specifications.
  • Maintain cleanliness and hygiene in all cheese production areas in line with health and safety regulations.
  • Manage inventory of cheese-making supplies and coordinate with chef de partie and sous chefs for timely restocking.
  • Control waste and optimize the use of ingredients to align with cost management goals.

Requirements

  • Knowledge and experience in cheese-making or a desire and willingness to learn in our kitchens.
  • Understanding of traditional Cypriot cheeses such as halloumi, Anari and Haliji, also sweets and shoushouko
  • Ability to work in a fast-paced environment and adapt under pressure.
  • Team player and enthusiastic to learn and evolve
