About the role The Sushi Chef is accountable for the end-to-end culinary experience of the sushi counter/outlet.
This includes preparation, presentation, and service of sushi and related Japanese dishes, while ensuring compliance with food safety standards, consistency in quality, and cost efficiency.
This role demands deep expertise in traditional and contemporary sushi techniques, as well as strong leadership and communication skills.
The Sushi Chef will be part of the Culinary team of our pop-up contemporary Japanese restaurant.
Key duties and responsibilities Curate and develop innovative sushi and sashimi menus that reflect both tradition and seasonal creativity.
Prepare all types of sushi including maki, nigiri, sashimi, temaki, and specialty rolls with precision and flair.
Ensure mise-en-place is completed to the highest standard in preparation for service.
Monitor and control inventory, including the daily requisition of ingredients, to maintain freshness and minimize waste.
Oversee quality control for all seafood and produce, ensuring alignment with the restaurant’s sourcing and sustainability standards.
Train and mentor junior staff in sushi preparation techniques, knife skills, hygiene, and plating standards.
Ensure all sushi bar operations are aligned with HACCP and internal hygiene protocols.
Collaborate with the Executive Chef and F&B team to align sushi offerings with broader menu strategies and guest preferences.
Engage with guests for personalized recommendations and showcase culinary craftsmanship through live demonstrations when required.
Manage kitchen schedules, ensuring optimal staffing coverage and task delegation.
Maintain all equipment related to sushi preparation in top condition and escalate any maintenance issues promptly.
Skills, experience & educational requirements Certified culinary training with a specialization in Japanese cuisine or sushi arts.
Minimum of 5 years of experience in a high-end sushi restaurant or luxury hospitality environment.
Proven ability to fillet fish and prepare various sushi types with authentic techniques.
Strong understanding of Japanese culinary culture, knife handling, and ingredient knowledge.
High attention to detail, cleanliness, and presentation aesthetics.
Demonstrated leadership in training, motivating, and developing team members.
Strong communication skills and fluency in English.
Experience working in accordance with international food safety standards (e.g., HACCP).
Passionate about culinary arts and guest service excellence.
Calm under pressure and solutions-oriented in dynamic service environments.
Strong interpersonal skills with a collaborative and respectful approach to teamwork.
Commitment to continuous improvement and innovation in culinary techniques and presentation.
